Course SummarySenior production chefs may lead a brigade team or may support the heads of departments or managers within a variety of establishments. They supervise production chef teams in a variety of kitchen environments, for example, schools, hospitals, care homes and high street casual dining or pub kitchens. Job roles include Head chef, Second Chef, Kitchen Manager / Supervisor, Cook. Senior production chefs have accountability for the day-to-day running of the kitchen service, producing, monitoring and maintaining consistent food standards, legislative requirements and quality across all areas and during all stages of production and supply. Senior production chefs strive to produce customers’ meals consistently to perfection according to predetermined specifications. They have the ability to work independently and lead a team in often hot and highly challenging kitchen environments. Production Chefs are likely to work in organisations where brands, recipes and menus have been created by a central development team. Production chefs and their teams work quickly and efficiently, producing food often in high volumes, which is repeated day after day, requiring energy, highly methodical organisational skills and attention to detail. This is also suitable for senior fish fryers. , Entry RequirementsThis course is for adults aged 16 and over and ideally suited for people working in a hospitality environment working 30 hours or more. You will need to complete an Initial assessment. The entry requirement for this apprenticeship will be decided by each employer. Entry L1 Functional Skills or GCSE. Qualification ObtainedCertificate in Skills for Further Education and Employment Industry Placement and Field TripsThe Apprentice must be if full time employment, with a contract of employment. The employer must agree to allow the Skills Coach and Specialist Practitioner access to the learner. Learning and Teaching MethodsThe course is delivered solely in the workplace, teaching will be delivered via our online E-Portfolio. Through 1:1 delivery with your skills coach and training from your employer. A requirement of 6 hours per week spent on Off the Job Training.
