Summary

Our Stage 2 Cake Decorating Skills course is a follow up to our Cake Decoration for Beginners. This six week course covers a range of techniques including:

  • How to level, torte and cover cakes to a professional standard
  • Working with royal icing, sugar paste and modelling paste
  • Cake design
  • Modelling a baby topper, novelty bag and shoes, roses and foliage

Extra costs and equipment

You will need to provide a general kit box which should include the following items:

  • Edible glue
  • Plastic cake smoother
  • Selection of paste colours
  • Modelling tool set
  • Piping nozzles
  • Cake boards
  • General scissors
  • Assorted cutters
  • 6” rolling pin
  • Pritt stick
  • 5 petal blossom cutters
  • Box to take your work home

You will be advised each week about ingredients you will need for the following week.

A 10% discount is given at the following cake supply shops if you tell them you are attending a B&FC course:

We advise that you wait until 1 week prior to the course before you purchase any of the ingredients or equipment listed above.

Please wear flat, full non-slip type shoes.

What will I learn?

Industry placement, field trips and guest speakers

This course has no work placements and no field trips.

How will I learn?

Each week, you will learn cake decorating skills including:

  • Week 1: Modelling a cute baby topper suitable for a baby shower cake
  • Week 2: Novelty shaped bag cake and shoes
  • Week 3: Completion of novelty bag and shoes
  • Week 4: Introduction to simple wired roses plus foliage
  • Week 5: Two tiered cake featuring decorative finish and rose decoration
  • Week 6: Decorating gorgeous mini cakes

Teaching is informal via a ‘demonstration and do’ method of delivery and a very hands-on practical approach.

No independent study is required.

All staff involved in the delivery of adult education courses within the College are approved to teach the subjects and modules they deliver.

The approval process ensures that staff delivering a given programme are appropriately qualified and, where appropriate, possess relevant technical and industrial experience and professional practice.
