Butchery Apprentice Carves Successful Future

A young butchery apprentice is carving a successful future after winning a national award from trade body the Institute of Meat. Tiffany Bromley, 21, who studies at Blackpool and The Fylde College, was named the Best Independent Retail Meat Apprentice at the annual prize giving reception at the historic Tallow Chandlers’ Hall in London.

Since starting her apprenticeship at Browns Butchers in November 2013, Tiffany has grown in confidence and aptitude to become a valued member of the team. During her time in employment, Tiffany has judged sausage competitions alongside legendary butchers Alan Bennett and Dennis Elliott, produced a sweet dry cure bacon in-house and made a black and white pudding roulade, both of which won a category award at the renowned BPEX industry competition.

Bill Tobin, an apprentice assessor at Blackpool and The Fylde College, nominated Tiffany for the award. He said: “Tiffany has shown an excellent attitude in completing all apprenticeship tasks. Her practical skills have proved to be exceptional, breaking down carcases into primal cuts and preparing displays in the shop premises.

"Tiffany has demonstrated her knowledge of all aspects of the industry and that has enabled her to deal confidently with customer enquiries and to provide a first rate service.”

Tiffany’s manager, Tim Brown, added: “Time and time again, Tiffany bewilders us with how quickly and confidently she picks things up. Her knowledge of cuts is second to none and she will quite happily discuss dishes with customers. She is constantly working towards better practices within her environment, using given knowledge both from college and management. Tiffany is also happy to input with regards to display and recipe ideas and regularly sets up the window display.”

Commenting on the award, Tiffany said: “I was thrilled to be nominated by Bill, my assessor at B&FC and Tim, my manager at Browns, and even more thrilled to receive the award at the ceremony in London. This has boosted my confidence and has made me more determined to progress further in the industry.”
