Course Overview

The course duration is between 12 – 14 months

 To achieve the main qualification candidates must attain a minimum of 40 credits

10 credits are mandatory, these units are:

  • Maintain a safe, hygienic and secure working environment
  • Work effectively as part of a hospitality team
  • Maintain food safety when preparing, storing and cooking food

Section A- 16 credits from the following

  • Produce basic fish dishes
  • Produce basic meat dishes
  • Produce basic poultry dishes
  • Produce basic vegetable dishes
  • Produce basic pasta dishes
  • Produce basic cakes, sponges and scones
  • Produce basic hot and cold desserts
  • Produce cold starters and salads
  • Produce basic hot sauces
  • Cook-chill food

Section B- 14 credits from the following

  •  Prepare hot and cold sandwiches
  • Produce basic egg dishes
  • Maintain and deal with payments
  • Provide a counter and takeaway service
  • Complete kitchen documentation
  • Set up and close kitchen
  • Produce healthier dishes
  • Maintain an efficient use of food resources
  • Maintain an efficient use of resources in the kitchen
  • Present menu items according to defined brand standards
  • Give customer a positive impression of yourself and your organisation
  • Employment rights and responsibilities in the hospitality , leisure , travel and tourism sector

Learners will need to undertake online tests to demonstrate their knowledge in the chosen units of the technical certificate
